Easy Cauliflower Pizza Recipes
I confess. I've been trying to make my own cauliflower crust pizza for 4 years now. I am an enthusiastic, over-achieving, do-it-yourself kind of polish girl. But this is SO much easier guys. And so much better then I could ever do. Here are two super healthy pizza recipes I made last night for some friends at a party. We are talking Gluten, Dairy, Soy-free, with almost no sugar and low in carbs. Enjoy!
First I bought this:

This crust can be bought in the Gluten-Free refrigerated section of your HEB supermarket. Then I moved on the toppings.
BBQ Chicken Pizza

1 Organic Chicken Breast
1/2 red onion
2 cups Organic Arugula
1 cup Vegan Pepperjack cheese.. I use this

1 cup Paleo BBQ sauce
Avocado Oil spray
salt/pepper to taste
Pre-heat oven to 425. Slice chicken. Saute chicken in pan with avocado oil. Add 1/2 BBQ sauce.. try this one:

Set aside. Pour remaining sauce over crust. Add arugula, onion slices, chicken, then cheese. Bake 12 minutes or until crust is crunchy and light brown. Enjoy!
Caprese Salad Pizza

1 Organic Tomato
2 cups Organic Basil
2 cloves garlic
1/2 cup Organic pine nuts
1/2 TS sea salt
2 TBS EVOO
3-4 slices Vegan Provolone cheese. I used this one..

For Pesto:
In food processor, puree 1 cup basil, olive oil, garlic and salt
Preheat oven to 425. Spread Pesto on crust then layer on cheese, tomato, onions, and remaining basil. Bake for 12-15 minutes. Enjoy!
